Giving an aroma that only agave can, these characteristics continue to develop to reveal savoury vegetal notes with a lovely rounded aroma of ripe green pepper. The background of the house can only be described as free-spirited while the drinks themselves are no less than artisanal marvels. The agave's are roasted for 5-7 days in earth lined pits and are then crushed using a horse drawn Tahona stone mill. A perfect balance of sweetness from the blue weber agaves, with subtle spice from the oak barrel ageing and a long, smooth finish.
